Taco Seasoning Mix
This salt free taco seasoning mix is quite hot and spicy, so you may want to adjust the amounts of chili and cayenne you use.
Ingredients: (makes about ½ cup)
4 tbsp chili powder
2½ tbsp paprika
2 tbsp ground cumin
2 tbsp Mexican oregano
1½ tbsp onion powder
1 tbsp garlic powder
2 tsp cayenne pepper
tbsp = tablespoon
tsp = teaspoon
Directions:
Simply combine all spices together and store in an airtight jar out of direct sunlight.
Like all spice blends, this taco seasoning mix will keep for a while, but after a time the flavours do start to dull a bit. So it's a good idea to make fresh batches every couple of months.
Baba Ganoush With a Taco Twist!
This is an easy healthy Baba Ganoush dip recipe. It makes a nice change from hummous and has a bit more of a lemony taste!
Ingredients: Makes about 2 cups
1 x eggplant (aubergine)
¼ cup tahini (sesame paste)
3 garlic cloves
4 tablespoons freshly squeezed lemon juice
1 tablespoon olive oil
1 tablespoon homemade taco mix
Directions:
1. Pre-heat oven to 180 - 200C
2. With a fork, prick the eggplant (aubergine) all over and put into the oven for 25 - 35 mins, or until softish and wrinkly.
3. When the eggplant (aubergine) has cooled you can easily remove the skin if you like, (I don't bother), and chop into smaller bits.
4. Place in a blender with the other ingredients and blend until smooth. You can add a bit of water if needed.
5. Season with salt & pepper
